A torpedo technician was a person whose specialty was repairing and building torpedoes.

In 2258 of the alternate reality, Spock asked Leonard McCoy to attempt to activate a advanced long-range torpedo as he had previously done by accident. McCoy then retorted that he was a "doctor, not a torpedo technician!" (Star Trek Into Darkness)
