Buffalo

The buffalo (Bison bison) was a large bovine mammal native to North America on Earth. Although once, as late as the 19th century, they existed in vast, unnumbered multitudes on the prairies, the buffalo was aggressively hunted and had become extinct by the 23rd century. (TOS: "The Man Trap")

The head of a buffalo-like creature was placed in a saloon on the Skagaran colony in the 2150s. (ENT: "North Star")

A number of hunting trophies can be seen in a saloon in one of the Human settlements. Horses and what appears to be a mounted buffalo head are also present on the planet; it is unsaid if these were taken from Earth, or if they were native.
